Josie started her playing career at Watford Ladies, making her first appearance during the 2010/11 FA Women's National League season. She left Watford and started a new chapter at Tottenham Hotspur, where she was first featured in the squad at the second half of the 2015–16 season.

Josie signed her first professional contract at Spurs prior to the 2019/20 FA WSL season. Her first full season with Spurs was one of their most successful, with Spurs winning The Quadruple including promotion to the FA Women's Super League. In August 2020, Josie took over from longtime Captain Jenna Schillaci as Tottenham’s new captain, after her experience as vice captain during the 2019-2020 FA WSL season. Following six years with Tottenham Hotspur, Josie signed to her current team Leicester City.

Although Josie was born in England, she was raised by Welsh parents and family so always felt her allegiance lay with Wales. Her first senior cap came at the age of 16, in 2010, when she was brought on during the Wales’ 2011 Women's World Cup qualification match vs Azerbaijan. Since then, she has played consistently for her country.

Alongside playing, Josie studied to become a teacher at St Mary’s University. On graduating, she worked as a teacher at St Thomas More Catholic School in Wood Green in North London where she taught PE and Geography. A year into her placement, Spurs got promoted to the WSL so she left her job to focus solely on football.

Outside of football, Josie is yoga enthusiast and has been combining it with her football training for over five years.
